Gerry said 2 minutes, I said 1 minute, and even that was a little too long. probably 45 seconds would do it. The thicker portion had a mild, pleasant, lemony taste, absent from the somewhat thinner portion of the tuber. Nicer texture where it was a little thicker too - just done as opposed to overdone. Keep in mind that I think al dente applies to more than pasta. Interesting, but not as exciting as the chanterelles I am hoping will pop up next month, as they did last year, a reward for all the rain. Judy
