There is a lot of variation in the size of Hymenocallis. You can grow H. palmeri in a one gallon pot (they are very small for a Hymenocallis). H. eucharidifolia is medium size, and can do well in a two gallon pot or larger. The more vigorous ones like H. littoralis and H. maximiliani need bigger pots. They bloom better and offset better in a larger container. One size does not fit all!
