So there I was at the Asian Market in Plainfield, New Jersey, buying fresh lotus root, shiitake mushrooms, small boy choy (their spelling is sometimes open to interpretation.) Looking at fresh udon noodles, rice noodles, looking, looking . . . and pick up a package of yam noodles. High fiber, no carbohydrates it says on the front. Turn it over and the ingredients are water, konjac flour, and calcium hydroxide. Aha! Bet I'm one of the few shoppers who know that konjac is (in it's other life, here on PBS) Amorphophallus. Did not buy any, so cannot relay information about the flavor. Judy in New Jersey where early bulbs are hurling themselves into bloom, trying to race ahead of the next (fourth) nor'easter.
