Evaporation cools, that's why damp terracotta for the outside pot is a good idea if you're trying to keep things cool. If you're trying to keep them warm, reducing evaporation is the game. In the very cold years here, I noticed that seedlings sealed in plastic bags survived, whilst those exposed to the air in the greenhouse did not, I put that down to lack of evaporation.
