Rolling the seeds down a fold in a piece of paper is a useful tecniqe, along with judicious blowing. Shaking the seed heads in a jar or large (paper) bag will often free a lot of seeds to start with, especially if the head is well dried. Often I will pick the seed head early and allow it to dry in the bag first.
