If money is no object, Haws watering cans (even the plastic ones) still
come with a brass rose. They thread onto the spout so you can take them off
(not particularly quickly) when you want a single stream.

In the US and Canada, you can order them from Lee Valley:

The Dramm 2 L watering can really is the best product out there. I have
been using it for years to water seedlings. They used to make the rose (or
"lotus" in Vietnamese because it resembles the seed head of a lotus) out of
metal, but now it's plastic.

A few years back you can order them from the New York Botanical Garden shop
-- they even ship!

In the Bay Area, Berkeley Horticultural Nursery keep them in stock.

See "2 Liter Watering Can"

Dramm must have planstmen on staff. Unfortunately their products are not
stocked everywhere.
