I don't live in Zone 5 (more like Zone 7), but I grow a lot of Eucomis, and I think the key to keeping them alive in extra-cold winters is to plant the bulbs deeply and put a lot of organic mulch over the top. When I moved to my new place, I put all the Eucomis species and selections in one bed that will be sure to get some water in summer, and added some heuchera hybrids with marbled red leaves to complement the purple-leaved Eucomis.
